It is time to spice things up with these deliciously creamy pumpkin pie bars featuring our Yin flavour! Pumpkin is a fall baking staple in many households, so we thought it would be fun to incorporate our Yin smoothie cubes into the ingredient line-up to help make these bars more flavourful and nourishing. Our Yin flavour is full of antioxidants and fibre, while also containing properties that soothe and improve your digestive system. Put on your apron, get out your blender, play your favourite tunes and grab your ingredients. It is time to cozy up and do some fall baking.

Yields: 16 bars
Prep Time: 30 minutes
Total Time: 4 hours, 30 minutes 
Pumpkin Pie Bars

Ingredients

Crust:

  • 1 cup dates, pitted 
  • 1 cup raw pecans
  • 1 cup graham crackers, crushed 
  • 2 tbsp. coconut oil 
  • 1 tsp. vanilla
  • Pinch sea salt 

Filling:

  • 1 Yin wheel 
  • 1 can coconut milk, 400 ml
  • 1 cup raw cashews, soaked 
  • ½ cup pumpkin puree 
  • 1/3 cup maple syrup 
  • 2 tbsp. coconut oil
  • 1 tsp. pumpkin pie spice
  • 1 tsp. vanilla
  • Pinch sea salt 
  • Optional toppings: coconut whipped cream, a dash of cinnamon

Steps

  1. Preparing the cashews: Soak for 30 minutes in hot warm water before making. Be sure to rinse well before mixing with other ingredients.
  2. Line an 8 x 8-inch baking dish with parchment paper.
  3. Using a food processor, mix together all of the ingredients for the crust until a loose crumble forms. Transfer the crust to the pan and pat down.
  4. In a blender, mix together all of the filling ingredients until smooth. Pour over the top of the crust.
  5. Cover and transfer to the freezer to set for a minimum of 4 hours or overnight. Let thaw for 30 minutes to 1 hour before serving.
  6. Cut into 16 bars and top with coconut whipped cream and a dash of cinnamon. Store in the freezer for optimal freshness.

Dear pumpkin spice fans – this one’s for you! I’m certainly not the only one to find that during the fall season, we all have, at one time or another, a need for comfort. Some people love to fill this need by binge-watching a TV show while being tightly wrapped under the covers. And there are others, like me, who find comfort by introducing autumn flavours into the kitchen. Think of stews, soups, squash, pumpkin, spices…and oatmeal! I believe that it’s finally time to give back some love and praise to this neglected breakfast from our childhood. By adding a few Evive Yin Smoothie cubes, caramelized apples and pecans, and pumpkin spice to your next oatmeal, I swear you won’t want to wait until morning to enjoy it! Grab a plush blanket, put on your favourite show, and enjoy this delicious oatmeal bowl!

Comforting Oatmeal Bowl with the Evive Yin Smoothie

Evive Yin Oatmeal Bowl

Serves 2 to 3 portions

Ingredients:

– 3 cubes of Evive’s Yin Smoothie
– 2 apples cut in slices
– 1 tablespoon of coconut oil
– 4 tablespoons maple syrup
– 1/3 cup of pecans
– 1 cup of oats
– 2 cups of almond milk
– 1 tablespoon of pumpkin spice

Steps:

In a frying pan over medium-high heat, sauté the apple slices and pecans in coconut oil and 2 tablespoons maple syrup. Cook until apples are caramelized (5 to 7 minutes), then set aside.

In the same pan, add the oats, pumpkin spice (or 5 spices), maple syrup, 2 Evive Yin Smoothie cubes, and almond milk. Bring to a boil, then lower the heat and simmer according to the cooking time indicated on the package of your oats.

When the mixture is creamy, pour into the bowls, then garnish with the apple-pecan mixture, pour 1 tablespoon of maple syrup per bowl, then finish with a Yin smoothie cube which will gently melt and add a touch of richness to the bowl… Bon appétit!
