During the wintertime, a great staple to have on the menu every week is a comforting home-cooked soup! Evive’s Mac Squash is the perfect trick for prepping a quick and healthy soup that you can easily personalize to your liking. Although this creamy squash soup is dairy-free, you can be assured that this recipe still tastes creamy and luxurious thanks to the high-quality organic ingredients like butternut squash and carrots. The Mac Squash is deliciously seasoned with turmeric, paprika, and nutmeg.
HOW TO MAKE A CREAMY VEGAN SQUASH SOUP

Use an Evive wheel and get a delicious texture every time!
1. Run a Mac Squash wheel under water for 3 seconds. Pop the cubes in a saucepan (or a microwave-safe bowl).
2. Add 150 ml of water and heat on the stove for 4-5 minutes over high heat, stirring occasionally (or put the bowl in the microwave 3-4 min).
3. Mix well with a spoon. Let stand 1 minute and enjoy!
🌟 Pro tip: You can also swap water for vegetable broth, or plant-based milk (like cashew, coconut or soy milk) if you’d like! In these photos, I used soy milk.
Optional toppings: plant-based yogurt, croutons, purple daikon radishes and yellow turnips (finely sliced), microgreens, salt flakes, or edible flowers. Pairs deliciously with a slice of sourdough bread.
