With Valentine’s day coming up this week, what are some things you’re doing to show yourself and the special people in your life some love? Although self-love and acts of appreciation are practices we should be doing on a daily basis, it doesn’t hurt to celebrate this special day of love by highlighting it in your own unique way. This year, we’ve decided to make some delicious pink pancakes! 💗 Thanks to our Viva smoothie cubes, these are the easiest and fluffiest pink pancakes you can make that are completely plant-based! If you’re looking to make it lower in sugar, omit the buttercream. Enjoy xx

Viva Pancakes:

– 2 cups flour
– 2 tsp. baking powder
– 1 tsp. baking soda
– Pinch of sea salt
– 4 Viva cubes, softened
– 1 ½ cups nut milk
– 2 tbsp. avocado oil 
– 2 tbsp. maple syrup 
– 2 tsp. vanilla extract 
– Optional: 1 tsp. beetroot powder for additional colour

Viva Buttercream:

– ½ cup vegan butter
– 4 Viva cubes, softened 
– 1 ¾ cups icing sugar
– 1 tsp. vanilla extract
– Pinch of sea salt 
– Optional: 1 tsp. beetroot powder for additional colour

STEPS

  1. Using an electric mixer, cream together all the ingredients for the buttercream until smooth. Set aside.
  2. In a small bowl, combine all the dry ingredients for the pancakes.
  3. In a medium bowl, puree the softened Viva cubes with a fork. Combine the rest of the wet ingredients in the same bowl and stir until combined.
  4. Whisk together the dry and wet ingredients until just combined. Be careful to not overmix.
  5. Heat a lightly oiled pan over medium heat. Cook the pancakes for approximately 2-3 minutes per side until slightly golden and cooked through. 
  6. Top with Viva buttercream and fresh fruit!
