With the onset of cold weather, we have fun creating different recipes featuring our smoothie cubes! This vegan muffin recipe is without a doubt our favourite. This is the perfect solution for a healthy, simple and fast lunch.

INGREDIENTS
- Samourai Evive Cubes
- 1 cup of Buckweat Flour
- 1 cup of quick oatmeal flakes
- 1/2 cup cane sugar
- 1 teaspoon baking powder
- 1 tsp chia seeds
- 1 pinch of salt
- 3/4 cup vanilla almond milk
- 1/4 cup vegetable oil
- 1 chia egg (1 tbsp ground chia seeds + 3 tbsp water)
- 1/2 tsp ground cinnamon

- Combine dry ingredients in a bowl
- Combine liquid ingredients in a second bowl
- Gradually mix the two bowls
- Grease a muffin pan and pour in half of the mixture
- Add one or two Evive cubes in the center of each mold
- Pour the second half of the mixture as well and cover the smoothie cube
- Bake for 12-17 minutes at 350°, depending on the intensity of your oven.
