Tom Thai Raw Buddha Bowl:
– 3 Tom Thai cubes – ½ of the Evive pre-cooked cauliflower rice bag – 1/3 cup purple cabbage, shredded – 1/3 cup carrots, diced or sticks – 1/3 cup cucumbers, diced – Garnishes: parsley and lime |
Steps
1. Warm the Tom Thai cubes in a pot over medium-high heat for 3-4 minutes.
2. In a bowl, add the pre-cooked cauliflower side.
3. Arrange the rest of the ingredients in the bowl and top with parsley, lime and any other preferred garnishes.
Tom Thai Roasted Buddha Bowl:

Steps
1. Preheat the oven to 375 degrees Fahrenheit. Coat the chickpeas, sweet potatoes, zucchini and peppers in oil, salt and pepper. Roast for approximately 30 minutes, or until browning/crisping.
2. Warm the Tom Thai cubes in a pot over medium-high heat for 3-4 minutes.
3. In a bowl, add the cauliflower rice.
4. Arrange the rest of the ingredients in the bowl and top with parsley and any other preferred garnishes.
