Homemade granola is one of the yummiest compliments to a quick brunch or breakfast. Nutritious and rich in fibre and protein, this is the ultimate healthy snack!
Personally, I find it even better mixed with Evive’s Yin flavour. This smoothie, made with gluten-free oats, carrots, mangos, carrots, chai spices and cardamom is the perfect addition to enhance the taste of your granola.
This homemade granola recipe is vegan and easy to make yourself!
Here’s how to make homemade granola with dried apples and apricots :
|– 1 Evive Yin smoothie wheel
– 2 tablespoons of melted coconut oil
– 2 tablespoons of maple syrup
– 1 cup of oatmeal (you can use gluten-free flakes if you prefer)
– ⅓ cup of peeled buckwheat groats
– ⅓ cup of walnuts, coarsely chopped
– ¼ cup of pumpkin seeds
– One or two pinches of salt
– ¼ cup of dried apricots, diced
– ¼ cup of dried apples, diced
Pop the smoothie cubes in a bowl and let melt. (You can also melt the cubes by placing them in the microwave for 30-60 seconds if necessary).
Preheat the oven to 350 degrees Fahrenheit. Then line a baking sheet with parchment paper and set aside.
Combine all the dry ingredients, except apricots and dried apples, in a large bowl, then set aside.
In a blender, mix the smoothie cubes, melted coconut oil and maple syrup together.
Pour the wet mixture over the dry ingredients and mix well. Spread evenly in a thin layer on the baking sheet.
Place in the oven and bake for 15 minutes.
Take out the baking sheet and, using a spoon, flip the granola while keeping large pieces intact.
Add the apricots and dried apples at the same time.
Return to the oven for 15 minutes, until golden brown, while removing the baking sheet every 5 minutes to mix the granola each time.
Let the granola sit before storing it in a jar. As it cools, it’ll also become crisper.
This recipe will give you 3 servings and can be stored up to a month at room temperature. You can also freeze it!
You can now enjoy your homemade granola with your favourite vegan yogurt. Enjoy it as an afternoon or add it to your breakfast smoothie bowl. If you want a higher protein version, you can add chia to it.
