Homemade granola is one of the yummiest compliments to a quick brunch or breakfast. Nutritious and rich in fibre and protein, this is the ultimate healthy snack!<\/p>\n\n\n\n

Personally, I find it even better mixed with Evive’s Yin flavour.<\/a> This smoothie, made with gluten-free oats, carrots, mangos, carrots, chai spices and cardamom is the perfect addition to enhance the taste of your granola.<\/p>\n\n\n\n

This homemade granola recipe is vegan and easy to make yourself!<\/p>\n\n\n\n

Here\u2019s how to make homemade granola with dried apples and apricots :<\/p>\n\n\n\n

Ingredients:<\/h3>\n\n\n\n
– 1 Evive Yin smoothie wheel<\/a>
– 2 tablespoons of melted coconut oil
– 2 tablespoons of maple syrup
– 1 cup of oatmeal (you can use gluten-free flakes if you prefer)
– \u2153 cup of peeled buckwheat groats
– \u2153 cup of walnuts, coarsely chopped
– \u00bc cup of pumpkin seeds
– One or two pinches of salt
– \u00bc cup of dried apricots, diced
– \u00bc cup of dried apples, diced<\/td><\/tr><\/tbody><\/table>\n\n\n\n

Steps:<\/h3>\n\n\n\n

Pop the smoothie cubes in a bowl and let melt. (You can also melt the cubes by placing them in the microwave for 30-60 seconds if necessary).<\/p>\n\n\n\n

Preheat the oven to 350 degrees Fahrenheit. Then line a baking sheet with parchment paper and set aside.<\/p>\n\n\n\n

Combine all the dry ingredients, except apricots and dried apples, in a large bowl, then set aside.<\/p>\n\n\n\n

In a blender, mix the smoothie cubes, melted coconut oil and maple syrup together.<\/p>\n\n\n\n

Pour the wet mixture over the dry ingredients and mix well. Spread evenly in a thin layer on the baking sheet.<\/p>\n\n\n\n

Place in the oven and bake for 15 minutes.<\/p>\n\n\n\n

Take out the baking sheet and, using a spoon, flip the granola while keeping large pieces intact. <\/p>\n\n\n\n

Add the apricots and dried apples at the same time.<\/p>\n\n\n\n

Return to the oven for 15 minutes, until golden brown, while removing the baking sheet every 5 minutes to mix the granola each time.<\/p>\n\n\n\n

Let the granola sit before storing it in a jar. As it cools, it\u2019ll also become crisper.<\/p>\n\n\n\n

This recipe will give you 3 servings and can be stored up to a month at room temperature. You can also freeze it!<\/p>\n\n\n\n

You can now enjoy your homemade granola with your favourite vegan yogurt. Enjoy it as an afternoon or add it to your breakfast smoothie bowl. If you want a higher protein version, you can add chia to it.<\/p>\n\n\n\n
