Hi there, lovely blog readers! This week, I have a very special recipe for you – a dairy-free matcha white hot chocolate that’s made with our Pure smoothie cubes. Pure is actually my favourite green smoothie of ours! It’s made with spinach, mango, avocado, matcha, and coconut cream. It’s seriously so creamy, delicious and super nutritious thanks to the incredible superfood ingredients like baobab, moringa, and chlorella. Did you know that matcha has one of the highest antioxidant ratings? Actually, 15 times more than blueberries! This high source of antioxidants can help prevent cell damage caused by free radicals. 

I hope you’ll enjoy this super easy and comforting hot chocolate this winter!

Ingredients:

Makes 2 to 3 servings

– 4 Pure cubes
– 1 can coconut milk
– 1 cup oat milk (any plant-based milk will work)
– 2 tsp. matcha powder
– 1/2 tsp. vanilla extract 
– 1/4 cup vegan white chocolate chips 
– Maple syrup (optional for sweetness) 
– Vegan marshmallows

Directions:

1. Combine all the ingredients except for the white chocolate chips in a blender. 

2. Blend until smooth. 

3. Add the blended mixture and chocolate chips to a pot.

4. On low-medium heat, warm the mixture making sure to stir often.

5. Pour the hot chocolate into 2-3 glasses and top with marshmallows.

What I’ve always thought was missing from french toast is a variety of texture. Yes, I agree with you french toast should be rich, moist and gooey. But, to balance everything out and make the eating experience even more enjoyable, adding a little “crunch” is quite necessary! 

In this recipe, we’ll be coating the toasts in coconut flakes, just as if we were making a classic breadcrumb. The bread is first soaked in the liquid mixture, then in the coconut flakes, finally to finish in a hot oiled pan. This will not only add a little crunchiness but will go wonderfully with the Pure Smoothie that’s made with mango, matcha tea and coconut cream.

Oh, and I almost forgot: For those of you who thought that it was absolutely necessary to use eggs to make a good french toast, here’s proof of the contrary! Enjoy without moderation! 😉

Toasted Coconut French Toast with the Evive Pure Smoothie

For 4 slices (2 portions)

Ingredients:

– Your favourite kind of bread cut in slices
– 1 tablespoon of chia seeds
– 3/4 cup of unsweetened almond milk
– 2 to 3 tablespoons of maple syrup
– ¾ cup of coarsely chopped coconut flakes
– 2 tablespoons of coconut oil
– ½ cup of vegan yogurt
– 2 cubes of Evive’s Pure Smoothie

Steps:

In a small bowl, combine the chia seeds with the almond milk and 1 tablespoon maple syrup. Stir, then let stand for about twenty minutes. Pour into a medium-sized deep dish.

On another plate, spread the coconut flakes.

Let the Pure Smoothie cubes melt, then mix them with the yogurt.

Dip a slice of bread into the liquid mixture, then into the dry mixture, then place it in an oiled frying pan for about 3 minutes on each side. Repeat for all slices.

To serve, place two slices per plate. Garnish with the yogurt and Pure Smoothie mix, then a little maple syrup.

*Tip: To keep your french toast warm, once they have finished cooking, place them in an oven at 250F.
