Pad Thai is all about having that fusion of delicious ingredients that provide such exciting textures and flavours! The richness from the coconut milk and rice noodles, crunchiness from the bean sprouts and veggies, and the acidity from the lime yield such a well-balanced bite – it’s no wonder that this dish is so well-liked around the world! Our Vegan Pad Thai is no exception, and the best part is, it’s ready in just 25 minutes. Enjoy!!

Makes 2 to 3 servings

INGREDIENTS:

– 1 Tom Thaï wheel
– 1⁄4 cup natural peanut butter (no added salt, sugar, etc.)
– 6 tablespoons of coconut milk or cream
(can be substituted with water)
– Juice of half a lime
– 1 1⁄2 teaspoon of maple syrup
– 1⁄4 teaspoon of rice vinegar
– 1⁄2 teaspoon of soy sauce & sriracha sauce (optional)
– 1 tablespoon of vegetable oil
– One medium zucchini
– One medium carrot
– A portion of rice noodles (flat type, fairly large)
– 1 cup of bean sprouts
– 2-3 green onions, chopped
– About 1⁄2 cup fresh cilantro, chopped
– 1⁄3 cup roasted peanuts, coarsely chopped
– Optional toppings: fresh cilantro, green onions,
peanuts, lime wedges

STEPS:

1. Place the serving of rice noodles in a bowl and cover them with boiled water. Let stand for 8 to 10 min (or according to the time indicated on the package), rinse with cold water and drain. Set aside.

2. Pop the Evive wheels in a small saucepan and melt over low-medium heat.

3. While the cubes are melting, prepare the other “noodles” with a grater or spiralizer by transforming the zucchini and carrot into zoodles.

4. Prepare the sauce: transfer the melted Tom Thaï cubes to a blender. Add the peanut butter, coconut milk and lime juice (and sriracha sauce, if desired). Blend until smooth and creamy. Transfer to a small saucepan and heat over low heat.

5. Heat oil in a large skillet or wok over medium-high heat. Sauté the zoodles quickly (2-3 minutes), being careful not to overcook them. Add the rice vermicelli and the sauce. Mix well.

6. Turn off the heat then add the green onions, fresh cilantro, and peanuts and stir. Garnish with more green onions, cilantro, peanuts, and a few lime wedges and serve.

It’s the beginning of March, and we’re finally starting to feel Spring approaching in the snowy city of Montreal. The sun shines a little longer each day, the ice and snow are slowly melting, and we may be feeling more energized. If you’re like many of the people in our community, you may be trying to transition your eating habits from the heavy winter foods towards lighter, nutritious meals that incorporate lots of fruits and vegetables. This delicious and refreshing green smoothie bowl recipe is such a great breakfast or lunch since it’s well-balanced. You’ll enjoy the high dose of vitamins from the green veggies, as well as the good amount of protein found in the hemp seeds. Top it all off with your favourite toppings and get nourished! 💚

Ingredients

• 1 cup of spinach or kale 🥬
• ½ cup of frozen mango pieces 🥭
• ½ cup of frozen pineapple chunks 🍍
• 1 banana (frozen or not), broken into pieces 🍌
• 1 orange, peeled and quartered 🍊
• 4 cubes of Evive’s Yogi Smoothie
• ¼ cup of shelled hemp seeds
• fresh mint leaves (optional)
• 2-3 pieces of fresh ginger (optional)
• ½ to 1 cup of plant-based milk (depending on the desired texture)

Steps

1. In a blender, add the spinach and the rest of the ingredients. Start with ½ cup vegetable milk and adjust if necessary.
2. If you’re only using frozen fruits (mango, pineapple, banana), wait 5-10 minutes before mixing everything in order to let the fruit thaw slightly.
3. If necessary, scrape the edges of the blender with a spatula and blend again.
4. Pour into a bowl and garnish with our favourite toppings (granola, fresh fruit, seeds, nuts, fresh mint, etc.)

✨Fun Fact: Did you know that Yogi flavour is one of the very first 3 flavours ever created by Evive? Bursting with its sweet taste of bananas and pears, it’s no wonder why it’s a fan favourite!

L’article 5 Easy Ways to Integrate a More Plant-Based Diet in 2020 est apparu en premier sur Evive Blog.

It’s no secret that here at Evive, we promote healthy eating through a plant-based diet. The creation of Evive all started with my journey towards veganism. It was from that moment on that I adopted a new habit that transformed my lifestyle: I started making smoothies every morning! I fell in love with how simple it was to incorporate nutritious foods that are essential for good physical and psychological health. Dominic followed me on this journey and, being the chef of the house, he had a lot of fun discovering a new world of possibilities in terms of healthy, vegan cuisine.

With all the environmental issues and disasters around the world, integrating a more plant-based diet is such a wonderful goal for 2020. If you haven’t committed to a New Year’s resolution yet, here’s a great one! Here are 5 easy ways to take care of yourself, your loved ones, and the planet by adopting more plant-based meals this year:

Photos by Odile JP

1. Protein swap – the RIGHT way: A common issue for people transitioning to a vegan diet is that their bodies could experience protein deficiency. In order to avoid this, it’s important to consume a variety of plant-based proteins during every meal.

2. Zoodles & noodles make everything more fun: As our Professional Photographer, Odile would say, vegan food is past the point of boring old salads. Discover many creative ways to transform vegetables into visually pleasing dishes. It’s true – we do tend to eat with our eyes! And I promise you, many spiralizers (like this one!) are affordable and super easy to use!

3. Plant-based milk is SO satisfying: Swapping your traditional latte with oat or almond milk is much more delicious than you’d think. And soy milk, like this one from Silk, will give you an additional boost of protein – a win-win!

4. Bulk up your breakfast with fruits and vegetables: I used to break my head over making my own ultimate breakfast smoothie that included organic fruits, vegetables, superfoods, and protein. And voila – Evive was born! It’s such a pleasure to see the satisfaction in the Evive community about how our smoothies have facilitated their families’ lives.

5. Get excited about GOOD fats: Nuts, all-natural nut butter, whole avocados, chia and flax seeds, hemp, as well as healthy oils, such as coconut oil and olive oil are healthy fats. Raw nuts and seeds are also a great addition to your morning oatmeal, granola, or smoothie bowl. The extra protein is always a bonus!

When adopting a plant-based diet, or any diet for that matter, it’s important to consult a healthcare practitioner so they can provide you with the best diet options for your body. We’re all unique – what works for me might not necessarily work for you. So, please get proper consultation.
