What could be more comforting than a warm soup or a homemade chili to get you through the coldest winter days? This cozy vegan chili soup & homemade tortilla chips recipe is so quick and easy to make thanks to our delicious Bam Chili! Its rich and delicious texture will warm your heart with a flavour reminiscent of the warm Mexican sun. Ingredients

Soup

  • 2 Bam Chili wheels
  • 400 ml of roasted diced tomatoes
  • ¼ to ½ cup of vegetable broth (depending on desired texture, more liquid or thicker)

Garnishes

  • Vegan sour cream
  • ½  avocado, diced
  • Fresh cilantro 
  • 1 small jalapeno, thinly sliced
  • Lime wedges
  • Tortilla chips (optional)

Steps

  1. In a small saucepan, melt the Bam Chili cubes over low heat with the broth (to prevent the cubes from sticking to the bottom). 
  2. When the cubes are melted, add the tomatoes.
  3. Top with the garnishes of your choice.

Tortilla chips

  1. Preheat oven to 350°F.
  2. Lightly brush 2-3 wheat tortillas with a thin layer of oil: stack them on top of each other and cut them into thin strips lengthwise, then into 2 or 3 pieces perpendicularly.
  3. Spread the rectangular pieces on a baking sheet. Sprinkle with salt and pepper to taste and, if desired, any other spice of choice (here: 1 tsp. of smoked paprika).
  4. Place in the oven and bake for 10 to 15 minutes, until the tortilla chips begin to colour slightly.
  5. Once cooled, store in an airtight container.

Things are about to get spooky! Whether you are wanting a quick weeknight meal or are serving guests at a Halloween party, this Scary-good Spiderweb Soup featuring our Mac Squash cubes is the perfect festive recipe! Scary-good Spiderweb Soup

Ingredients

  • 2 Mac Squash wheels
  • 1 cup carrots, cubed 
  • 1 cup squash, cubed 
  • 1 cup cashew milk (can add more for desired consistency) 
  • 1/3 cup vegan sour cream
  • 3 kalamata olives

Steps

  1. Preheat the oven to 400 F. Cut up the carrots and squash into 1-inch cubes and drizzle with olive oil, salt and pepper. Roast for 25 minutes, or until soft. 
  2. While the vegetables are roasting, add the cubes and cashew milk to a saucepan. Heat for 4-5 minutes over high heat, or until softened. 
  3. Add the roasted vegetables and Mac Squash mixture to a high-speed blender and blend until smooth. Transfer to bowls. 
  4. Add a small amount of water to the sour cream to create a slightly thinner consistency. Pipe the sour cream in 3 circles on the top of the soup. Use a toothpick to drag the sour cream into 3 spiderweb shapes. 
  5. Cut 1 olive in half to use as the body of each spider. Cut the other 2 olives into 8 slices each, creating a total of 16 slices. Top each bowl with an olive spider.

  1. In a medium pot, warm up the Golden Curry cubes for 4-5 minutes.
  2. In another medium pot, warm up the quinoa for 4-5 minutes.

One of my favourite weeknight meals that Dominic whips up for us is some sort of a healthy loaded veggie bowl featuring one of our Evive lunches. This Bam Chili sweet potato fries bowl is a perfect example! I love this recipe especially because it’s filled with so many nutritious ingredients and yet still feels so indulgent. You can prepare the sweet potato fries in the oven or in an air fryer if you have one. I hope you like this super tasty meal as much as we do!

INGREDIENTS

– 1 Bam Chili wheel 
– 1 small sweet potato or approximately 1 cup pre-cut sweet potato fries
– 1/3 cup black beans
– 1/3 cup tomatoes, diced
– 1/3 cup bell pepper, chopped
– 1/3 cup vegan cheddar cheese
– 1/3 cup green onions
– Additional garnishes: jalapeños, parsley and lime

STEPS

Pad Thai is all about having that fusion of delicious ingredients that provide such exciting textures and flavours! The richness from the coconut milk and rice noodles, crunchiness from the bean sprouts and veggies, and the acidity from the lime yield such a well-balanced bite – it’s no wonder that this dish is so well-liked around the world! Our Vegan Pad Thai is no exception, and the best part is, it’s ready in just 25 minutes. Enjoy!!

Makes 2 to 3 servings

INGREDIENTS:

– 1 Tom Thaï wheel
– 1⁄4 cup natural peanut butter (no added salt, sugar, etc.)
– 6 tablespoons of coconut milk or cream
(can be substituted with water)
– Juice of half a lime
– 1 1⁄2 teaspoon of maple syrup
– 1⁄4 teaspoon of rice vinegar
– 1⁄2 teaspoon of soy sauce & sriracha sauce (optional)
– 1 tablespoon of vegetable oil
– One medium zucchini
– One medium carrot
– A portion of rice noodles (flat type, fairly large)
– 1 cup of bean sprouts
– 2-3 green onions, chopped
– About 1⁄2 cup fresh cilantro, chopped
– 1⁄3 cup roasted peanuts, coarsely chopped
– Optional toppings: fresh cilantro, green onions,
peanuts, lime wedges

STEPS:

1. Place the serving of rice noodles in a bowl and cover them with boiled water. Let stand for 8 to 10 min (or according to the time indicated on the package), rinse with cold water and drain. Set aside.

2. Pop the Evive wheels in a small saucepan and melt over low-medium heat.

3. While the cubes are melting, prepare the other “noodles” with a grater or spiralizer by transforming the zucchini and carrot into zoodles.

4. Prepare the sauce: transfer the melted Tom Thaï cubes to a blender. Add the peanut butter, coconut milk and lime juice (and sriracha sauce, if desired). Blend until smooth and creamy. Transfer to a small saucepan and heat over low heat.

5. Heat oil in a large skillet or wok over medium-high heat. Sauté the zoodles quickly (2-3 minutes), being careful not to overcook them. Add the rice vermicelli and the sauce. Mix well.

6. Turn off the heat then add the green onions, fresh cilantro, and peanuts and stir. Garnish with more green onions, cilantro, peanuts, and a few lime wedges and serve.

HOW TO MAKE A CREAMY VEGAN SQUASH SOUP

Use an Evive wheel and get a delicious texture every time!

1. Run a Mac Squash wheel under water for 3 seconds. Pop the cubes in a saucepan (or a microwave-safe bowl).

2. Add 150 ml of water and heat on the stove for 4-5 minutes over high heat, stirring occasionally (or put the bowl in the microwave 3-4 min).

3. Mix well with a spoon. Let stand 1 minute and enjoy!

🌟 Pro tip: You can also swap water for vegetable broth, or plant-based milk (like cashew, coconut or soy milk) if you’d like! In these photos, I used soy milk.

Optional toppings: plant-based yogurt, croutons, purple daikon radishes and yellow turnips (finely sliced), microgreens, salt flakes, or edible flowers. Pairs deliciously with a slice of sourdough bread.

As a work-at-home mom, it’s taken me some time to figure out my “balancing act.” Maintaining my busy career while upkeeping a household definitely keeps me on my toes. I’m incredibly passionate about my work and of course, being a mom. So when my days are packed to the brim with deadlines, activities, and appointments, I’m at my happiest (and feeling my best).

Don’t get me wrong: my routine constantly changes. As rigorous as my schedule can get, I allow for flexibility to suit my family’s ever-changing needs.

When I first started off as a WAHM, I was all over the place – especially when it came to preparing meals for myself. In the middle of my workday, my lunches would often fall flat. I’d munch on something unhealthy or quickly order take-out. For my sanity and most importantly, my health, I knew this habit needed to change. I always made sure my little one would have something delish but would forgo my plate to focus on work.

Well, as I mentioned, parenting is all about finding a balance and learning! I have since learned to incorporate quick, healthy meals for my entire family (and myself!) to enjoy.

5 Easy Plant-Based Lunches to Make

Stuck on tasty lunch ideas? Here are a few of my favourite recipes:

1. Mac Squash Macaroni

Evive’s Mac Squash frozen lunch wheel puts a vegan twist to a household classic: mac and cheese.

You’ll need:

  • 1 serving of cooked elbow macaroni
  • 1 wheel of Evive’s Mac Squash
  • 2 tbsp almond milk
  • Chilli pepper flakes and fresh oregano, for garnishing

1. Prepare Evive Mac Squash on the stovetop for about 5 minutes. At the 4-minute mark, add almond milk and mix to combine.

2. Add the prepared Mac Squash to a large bowl along with the cooked pasta and fold.

3. Serve in a bowl and garnish with chilli pepper flakes and fresh oregano.

2. Tom Thaï Rice Bowl

This rice bowl is inspired by Asian cuisine and it’s full of delicious ingredients.

You’ll need:

  • 1 wheel of Evive’s Tom Thaï
  • 1 serving cooked jasmine rice
  • 2 tsp sesame seeds
  • 2 tbsp chopped green onion
  • 4-5 cherry tomatoes, halved

1. Prepare Evive’s Tom Thaï according to the package’s directions.

2. Serve over rice and garnish with sesame seeds followed by green onions and cherry tomatoes.

3. Bam Chili Soup

On cold autumn days, soup is my ultimate go-to meal. Check out how I whipped up this quick bowl of chili soup all thanks to Evive’s Bam Chili frozen lunch wheel.

You’ll need:

  • 1 wheel of Evive’s Bam Chili
  • 2/3 cups water
  • 2 tbsp almond milk
  • ½ avocado, peeled and sliced

1. Add Bam Chili into a medium saucepan, followed by water. Cook over medium-high heat for about 4-5 minutes.

2. Pour into a serving bowl and drizzle with almond milk. Add sliced avocados on top.

4. Avocado Toast with Cherry Tomatoes and Roasted Chickpeas

This loaded avo toast is out of this world! It’s definitely a family favourite of ours.

You’ll need:

  • 1 avocado, peeled and mashed
  • 2 slices of vegan bread, toasted
  • Roasted chickpeas (recipe below!)
  • 5-6 cherry tomatoes, halved
  • Extra virgin olive oil
  • Salt and pepper, to taste

I recommend making the chickpeas the night before. To do so, you’ll need:

  • 1 can chickpeas, drained and rinsed
  • 3 tbsp EVOO (extra virgin olive oil)
  • 2 tsp sweet paprika

1. Preheat the oven to 400 degrees and line a baking sheet with parchment paper.

2. Spread chickpeas on a lined baking sheet. Drizzle with EVOO.

3. Bake for 20 minutes. Garnish with sweet paprika. Allow to cool and store in an airtight container or mason jar.

To make the avocado toast:

1. Spread avocado on each piece of toast.

2. Garnish with cherry tomato halves and roasted chickpeas.

3. Drizzle with EVOO and salt and pepper (to your liking!).

5. Japanese Cucumber Salad

Craving something fresh? This quick and simple salad should do the trick!

You’ll need:

  • 1 large cucumber, peeled and sliced
  • 1 tsp soy sauce
  • 2 tbsp rice wine vinegar
  • ¼ tsp salt
  • Sesame seeds, for garnishing

1. Add all ingredients except for sesame seeds to a large bowl and mix.

After 2 years of hard work, we are so proud to be able to offer you Evive lunches! We created this line so you can make a variety of healthy meals in minutes. There isn’t anything like these products on the market!

Before we dive into all the exciting aspects of this new product line, I want to share with you more about our vision:
